2019 Finn - Blanc de Noirs

The 2019 Blanc de Noirs is a classic Methode Champenoise sparkling wine made entirely of Pinot Noir.  Whole cluster pressed after picking at night to maintain acidity and minimize oxygen exposure. The wine was then fermented in stainless and aged on the lees in bottle for 51 months before disgorging. This wine received zero sugar in its dosage, only 12ml of still wine and a small amount of sulfur to offset the minimal oxygen from the cork.

Aged: Aging: 10 months in stainless, 51 months “En Tirage” before disgorging.

2022 Holly King - Sauvignon Blanc

Precise and floral, with lychee, white peach and caramelized citrus. Swirling adds honeycomb and tropical yellow fruits. The palate is polished and bright with pithy citrus, stone fruit and a lingering of fresh herbs and chalky minerals.

2022 Netshed - Cabernet Sauvignon

A complex mixture of black currants, blackberry and plum skin. Interwoven notes of sandalwood, vanilla bean and a hint of bay leaf play in the background. The palate is juicy and structured with pressed black fruits and black tea on the finish.

2022 Round Rock - Merlot

Sultry and spiced with plums, currants and black cherry. A hint of vanilla bean, blackberry jam and sassafras comes up with air. The palate is luscious, with good volume and fine but present tannins. The finish is spiced but sophisticated and the wine will continue to become more resolved and hedonistic with time.

2022 Vine - Cabernet Franc

Expressive nose of tea spiced currants, plum and blackberry. Hints of spring flowers and wood spice linger in the background. Swirling adds spun sugar and baking spice to the complex, yet incredibly defined fruit. The palate is full-bodied and juicy with its combination of tannin, sweet red and black fruits and vibrant acidity. A very serious wine, but irresistible now. Save what you can for a rainy day.
