2019 Finn - Blanc de Noirs
Production notes
The 2019 Blanc de Noirs is a classic Methode Champenoise sparkling wine made entirely of Pinot Noir. Whole cluster pressed after picking at night to maintain acidity and minimize oxygen exposure. The wine was then fermented in stainless and aged on the lees in bottle for 51 months before disgorging. This wine received zero sugar in its dosage, only 12ml of still wine and a small amount of sulfur to offset the minimal oxygen from the cork.
